UMBRICELLI is a hand rolled fresh pasta, irregular shaped, typical of poor peasant cooking, spread throughout Umbria. UMBRICELLI takes different names depending on the location that produces them : therefore will be called umbricelli, umbrichelli, strangozzi, strozzapreti, ciriole.
